Shawarma is a taste bomb and has been so popular around the globe especially in Middle Eastern countries. This delicacy is considered as an Arabic fast food that is permanently part of the menus of most restaurants in the region. You can try these famous wraps with a hefty amount of mutton, beef, veal, turkey, chicken or fish served along with a vegetable salad. Do you wanna know the secret of this famous Arabic delicacy? Well, the secret of shawarma is simply in the marinating. The meat is marinated for at least one day, preferably two, especially if it's beef and then roasted over a slow flame for several hours. The marinade consists of lots of garlic, yogurt, lemon, ginger, cinnamon, cloves, cardamom, dried lime, nutmeg, bay leaves, spicy paprika, vinegar and sometimes slices of orange added. The meat is placed in a special machine called spit while it is being grilled then shredded and later rolled in a pita or freshly made tortillas.
For perfect serving, the shredded meat is complemented with mayonnaise, chili sauce, vinegar or traditional Arab sauces like tahini - sesame sauce, hummus, chopped cucumber, tomatoes, and onions are rolled together.
In case you are wondering, the word “Shawarma” is derived from a Turkish word “cevirme” which means turning. In ancient times, a wood fire was used in order to cook shawarma instead of the modern gas flame that we are using right now.
